來自德國黑森林的Monkey 47，最早始於英國皇家空軍中校Mongomery Collins之手。1909年生於印度的Collins，在第二次世界大戰後到德國服役，協助修復殘破的柏林。他更以個人名義重建柏林動物園，還認養了一隻猴子取名為Max。退役後，Collins繼續定居德國，於黑森林北部開設一家旅館名為The Wild Monkey。他按照英國傳統調配了一款獨特的氈酒，供旅館客人享用。
該旅館裝修時被發現一個木箱，裡頭有一罐印上手繪猴子圖案標籤的酒瓶及手稿，瓶身寫上Max the Monkey, Schwarzwald（黑森林）Dry Gin。手稿上註有該酒的配方，大部份原料來自黑森林，及部份源自印度的香料。2006年，Alexander Stein對這獨特的氈酒一試鍾情，決定與國際知名的餾酒師 Christopher Keller 合作蒸餾這款氈酒，並將之命名為Monkey 47，紀念Collins和他認養的猴子Max，亦代表配方中的47種原料。
經過幾年對各種木材的實驗和研究，Barrel Cut採用於黑森林內的稀有桑樹製成的木桶作陳釀。桑樹桶由傳統的木匠手工製作，內部再經烘烤以帶出香氣。成熟過程中，酒液吸收了這種木材帶有的高度芳香，並產生了獨特金黃色色和淡淡的果香和精緻優雅的甜味。酒體較深沉和複雜，口感柔和，結合了極其密集和獨特複雜的體驗。

根據香港法律，不得在業務過程中，向未成年人售賣或供應令人醺醉的酒類。
購買令人醺醉的酒類產品（以按體積計算含1.2%乙醇的飲料）的人士必須年滿18歲。
